Hafod is produced using the raw (unpasteurised) milk from Holden farm’s 80 Ayrshire cows. Ayrshire milk is rich in butterfat and protein and is widely regarded as being ideally suited to cheesemaking. It is this unique combination of organic Ayrshire milk and traditional cheesemaking techniques that gives Hafod its buttery, rich and nutty flavours.
Holden Farm Dairy is Wales' longest certified organic dairy farm, situated about 10 miles from the Ceredigion coast, West Wales. We produce a traditional hard cheese called Hafod using raw milk from our 75 Ayrshire cows.
